Beetroot fried rice

Ingredients:


Basmati Rice - 1 cup
Shredded Beetroot -1 cup
Salt to taste
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Channa dal -1 tsp
Urad dal - 1 tsp
Curry leaves - few
Hing - a pinch 
Finely chopped Onions - 1
Dried red chillies - 2 
Shredded Coconut - 1/2 cup
Oil - 3 tsp
Coriander leaves - for garnish


Method:


1) Cook Basmati rice and spread it to cool.
2) Heat oil in a pan and add curry leaves, mustard seeds, cumin seeds, red chillies, channa dal , urad dal , hing and fry well.
3) Add chopped Onions and fry till they are transparent.
4) Add shredded beet root and cook well by closing the lid for 10 minutes.
5) Add some water if necessary.
6) Add shredded coconut and mix well.
7) Now add Cooked rice slowly and mix well.
8) Adjust the spice by adding red chilli powder if required.
9) Garnish with coriander leaves and serve hot with Raitha.
