Ginger Chutney




Ingredients:

3 inch piece- Ginger, chopped to small pieces
1 tbsp Coriander seeds
1 tbsp Urad dal
1/4 tsp Methi seeds
4 to 6 dry red chillies
2 tbsp grated jaggery
2 cloves of garlic chopped
1 lime size Tamarind
Salt to taste
1 tbsp Oil

Seasoning:

1/2 tsp Mustard seeds
1/2 tsp Urad dal
1/2 tsp Channa dal
1/4 tsp Cumin seeds
Curry leaves - few
2 pinches of Hing

    Method:
    1. Soak tamarind in little water and make it soft and keep aside.
    2. Heat oil in a kadai and add urad dal,coriander seeds,methi seeds and fry on low heat.Add red dry chillies and fry lightly.
    3. Drain the fried ingredients out of oil and transfer into a blender and make powder of the ingredients.
    4. In the same kadai add ginger,garlic and fry lightly,till the raw smell goes away.Transfer ginger and garlic to the blender.
    5. Add soaked tamarind and jaggery into the blender.
    6. Grind all ingredients together to a smooth paste.Add salt tot taste and little water to just make the blender move.
    7. To season, on a low flame, heat oil in a kadai and add mustard seeds and let them pop.
    8. Then add urad dal,channa dal and fry till golden brown.
    9. Add cumin seeds, hing and curry leaves.
    10. Add grinded chutney and mix well.
    11. Serve with dosa, idly or undrallu.

    Chenniginjala Chutney/ Peanut Chutney

    Ingredients:


    Roasted Peanuts - 1/2 Cup
    Red chillies - 4
    Mustard Seeds - 1/4 tsb
    FenuGreek seeds - few
    Asafoetida - pinch
    Salt to taste
    Curry leaves - few
    Oil - 1 tsb


    Method:


    1) Heat oil in a pan and add mustard seeds, Curry leaves, Fenugreek seeds, Red chillies and Asafoeida and fry.
    2) Stir well and remove from heat and let it cool.
    3) Place all the above into a blender and grind in to fine powder.
    4) Add roasted peanuts , salt and water and grind well.
    5) For a different taste you can add Green Mango pieces to the blender along with all other ingredients.

    Chutney


    Ingredients:

    Onions-1
    Tomato-1/2
    salt to taste
    Green chillies-4
    Groundnut powder-1/2 cup
    Water -1/2 cup

    Method:



    1) Add chopped Oninons,Green chillies,Tomato,salt and water to a presuure cooker and cook it for 2 vissels.
    2) Add finely groundnut powder to the mixture and stir well.
    3) Garnish with coriander leaves and serve with Dose,Sangati or chapathi.
