Ingredients:
Karela/Kakarakai (Bitter gourd) - 4
Onions - 1 (finely chopped)
Ginger garlic paste - 1 tbsp
Salt to taste
Turmeric powder -1 tsp
Chilli powder -1 tbsp
Oil - 2 tbsp
Jaggery or Sugar - 1 to 2 tsp
Besan (Bengal gram flour) - 2 tbsp
Cumin seeds -1 tsp
Amchoor powder - 1 tbsp
Fennel - 2 tsp
Coriander leaves - handful
Method:
1) Scrape the rough edges of bitter gourd and slit them at the middle and remove the seeds and make a pocket and keep aside
2) Chop the seeds and keep aside.
3) In a kadai heat oil and add cumin seeds,fennel seeds,Onions and fry till golden brown
4) Add ginger garlic paste,turmeric powder, chopped seeds and fry for few more minutes.
5) Add chilli powder, besan powder and mix well and fry till the raw smell of besan is gone.
6) Sprinkle little bit of water if its too dry
7) Finally add amchoor powder, jaggery and mix well
8) Take the stuffing aside and let it cool a bit
9) Now take the bitter gourd and stuff it with the prepared stuffing
10) Tie them with twin thread as shown in picture so that the stuffing does not come out
11) Shallow fry in medium heat changing the sides till well cooked and crispy.
12) Enjoy with rice.

Urad dal - 2 tsp
Chann dal - 2 tsp
Cumin seed s- 1 tsp
Mustard seeds - 1/2 tsp
Curry leaves - few
Dry red chillies - 2
Chik Pea powder - 1 1/2 tsp
Jaggery - 1 tsp
Method:
1) Peel the skin of bitter gourd lightly and cut into small pieces by removing seeds.
2) Heat oil in a pan and add mustard seeds, once they splutter add curry leaves, urad dal, channa dal, dry red chillies, cumin seeds , garlic cloves and fry well.
3) Make sure they are not burnt.
3) Add finely chopped Bitter gourd and fry well for 5 to 7 minutes on medium flame.
4) Add Jaggery and mix well.
5) Fry it on low flame for about 7 minutes and serve hot as a side dish with Rice or Roti.

Red Chili powder - 1/2 tsp
Oil for Deep fry
Method:
1) Scrap outside of Bitter gourd and set aside.
2) Nip the two ends of the bitter gourd.
3) Now cut the bitter gourd into circuar shape and remove the seeds from them.
4) Heat oil in a pan and deep fry the pieces till golden brown.
5) Set the fried bitter gourd on tissue to drain excess oil.
6) Heat 1 tsp oil in a pan and add mashed garlic cloves, curry leaves and fry well.
7) Add fried bitter gourd to the pan and mix well.
8) Add salt and red chili powder and mix well.
9) Serve as a side dish with Mudda Pappu and rice.
